Milk bun plain dough, soft and nice texture.




Bread maker dough function:
A)
130ml water
1 egg
1/2 tsp salt
2 tbsp sugar
2tbsp milk powder
300g Bread flour
2 tsp dry yeast
40g Butter
* BM dough function and 1st round proofing. Takes ~1.5hr

Take out the dough, deflat and cut into ~ 12 equal ball size or shape as you like.
(You can add cinnamon sugar or cheese or raisin or ham etc as your preference.
Or just the plain bun is tasty enough to go with a cup of cafe latte 😋)

Leave the dough for 2nd rise ~ 1hr.
Bake it at 180C ~12-15min

Spread butter whole bun is hot right out from oven to get the shiny surface.

Croissant




Recipe:
8oz All purpose flour
1Ts yeast (10g)
1/2 cup water/milk (120ml)
4oz butter (125g)
3 Ts sugar (35g)
1ts salt
Bake ~ 375F for 15-18min
* the recipe make about 8 small croissant.

Sweet Potatoe Bun (番薯包)






Ingredients (for ~ 25 buns):
  • Sweet potatoes 300g
  • 1 carrot
  • Bread Flour 1kg
  • Baking Powder 1Ts
  • Instant Yeast 1Ts
  • Lard (白油) or replace with Cooking oil 50g
  • Sugar 250g
  • Water 400ml

Boil sweet potatoes and carrot in water until soft. Smash or blend it in blender/chopper until smooth. Let it cool to room temperature. Add smash sweet potatoes to the rest of flour mixture and kneat the dough evenly and until not sticky to your hand. Divide the dough into small pieces (~ 100g) each small dough and cover with wet cloth or plastic wrap until the dough rise to ~ 1.5x or 2x bigger. Steam for 10 min.

Homemade Bagel

Bagel in California is common for breakfast . I like its chewing bread texture, and it usually served with cream cheese, peanut butter or a more dedicate combination is with eggwich+sausage+bacon or tuna/chicken cheese melt. There are many varieties of bagel. It has cinnamon raisin, jalapeno, cheddar cheese, sesami seed, garlic, anion,poppy seed, wheat. The bagel i am making here is with raisin, sesami seed and cheddar cheese. It's my first time making bagel.. whoo.. a lot of first time.. it turns out pretty good although the shape is a bit small/uneven, but the texture and taste is satisfying. I will try to improve it next time by properly measuring each dough to make sure the bagel turns out all to be equal size :)











Recipe 1:

4 cups bread flour/Wheat Flour
1 Tbls sugar
1 1/2 tsps salt
1 Tbls vegetable oil
2 tsps instant yeast
1-1/4- 1-1/2 cups of warm water.






or

Recipe 2:

2 lbs bread flour
5 tsp ground cinnamon
1.5 tsp salt
560 ml lukewarm water
2 g active dry yeast
6 g. malt powder/Honey/Sugar
2/3 cup raisins


Method:
Mix all the ingredients in a bowl. Transfer the dough to countertop and knead for about ten minutes, or until the dough is uniform and smooth. Cut the dough into 8 equal sized balls, and let rest for 10-20 minutes Pre heat your oven to 425.

Now, take each of the dough balls and using two hands, roll it into a little snake on the counter. When the snake is longer than the width of your two hands, wrap it around your dominant roiling hand. Let your bagels rest on the counter for about 20 minutes, and meanwhile, bring a pot of water to boil, and grease a large baking tray lightly. You can just rub a splash of vegetable oil and rub it around.

Boil for about a minute, turn them over, and boil for another minute. Take them out and you may coat the bagel with either sesami seed, cheese, garlic/anion. Let dry for a minute and then place them on your oiled baking tray. Bake at 425F for 20-25 min.

Rotiboy

Rotiboy (also called Mexican bun) is very famous in Malaysia, it has coffee topping with cream cheese filling. You will smell the coffee fragrant from far, which will attract you move toward the bakery direction and grab a few to feed your stomach. I learned this recipe from my colleagues, Ji Ae, who is good in baking and cooking almost everything. She is my idol, inspires me to bake and cook during my free time.

Pizza with sweet potato filling






Pizza dough ingredients (12" pizza):
Bread flour 200g
cake flour 50g
sugar 10g
salt 5g
instant dry yeast 4g
milk 20g
egg white 1
Butter 10g or olive oil 2 Ts
Method:
Mix all ingredients and knead for ~ 10 min. Set aside at warm place (cover with warm cloth) for ~ 1hr, let the dough rise double the original size. Flatter the dough and shape it to fit the pizza pan ~ 12". Add mash sweet potatoes to dough edge, bake it at 500oF for 5 min (optional). Add topping: tomato paste, shreded cheese, pineapple, sausages/pepperoni, anion etc. Bake at 400F for 10-13min.

Chinese Steam Bun (包子)

Today it's my first time making steam chinese Bun (Curry Bao). I usually buy the instant Bun flour which it has all the flour mixture ready. However, I found the flavor and texture is not as good, therefore i decided to make the doug myself, the filling can be anything you like, i choose curry curry with potatoes and sweet pandan coconut jam (Kaya). for this time.. both taste really good and i feel happy and contented to see the bun made by myself..

Ingredients for dough:
3 cups of bread flour
1 packet of Rapid Rise Yeast (~2 tsp, 5g)
2 tsp of sugar
1 tsp of salt
1 tablespoon of olive oil
1 1/8 cups of warm water (or milk)

mix all the dough ingredients together; knead the dough until it does not stick to your hand. . Set the dough aside at warm place to rise ~ 2hr (cover with wet kitchen cloth). The dough will rise double the original size. Punch the dough with your hand to release the air in the dough. Roll the dough and cut into small round pieces. The ingredients make ~ 20 buns.

Cinnamon Bun








    I love cinnamon bun, we can buy it from the market or bread shop, however the bread seemed lack of ingredients and not so tasty, soft and mosit.. so i want try to make my own cinnamon bun this time. The bun looks sucessful, but it a bit hard at the edges, i search the internet and find out the reason of hard edge at outer layer may be due to over bake, to make the bun softer and moist, you can add more egg yolk, or reduce the baking time by 5 min, once remove from oven, brush it with melted butter and cover with aluminum foil to avoid the bun become dry.

    Here is the ingredigrents:

  1. 3 cups of bread flour or all purpose flour
  2. 3 tablespoon of sugar
  3. Half tsp of salt
  4. 1 1/2 tsp of instant dry yeast
  5. 1 cup of milk
  6. 1 stick of butter, melted, to add to dough
  7. 1/2 stick (4 tablespoon) of butter to spread on the flatter dough
  8. 1 egg
  9. 1/2 cup brown sugar
  10. 1 1/2 to 2 tablespoon of cinnamon powder

Mix all ingredient (1-8 )together with mixer or kneat by hand until it doesn't stick to your hand (refer to the Chinese steam bun picture), let it rest for 15-20 min. at warm place to let it rise. Roll the doug to flat rectangular (10'x15'), brush in 1/2 stick butter, spread on the cinnemon powder with brown sugar. Roll up the doug from the long end. Cut it into small piece, place to the baking pan, and let it sit for 20 min before turn on the oven to 375F to bake for15-20min.
